Truffle Recipes
Truffled pasta

2 cups all purpose flour
3 eggs
1 T. Oregon white truffle powder
water as needed

Combine in mixer. Let rest overnight in the refrigerator,
well wrapped. Roll through machine as always. Boil and drain.
Truffle butter
-----------------------------------------------------------------------------
1/2 lb. good, unsalted butter, softened
4 oz. black or white Oregon truffles (fresh or frozen),
chopped fine or grated

Combine.
Truffled Chicken Breast

Skin on chicken breast, as needed
1 T truffle butter per breast
-----------------------------------------------------------------------------
Preheat oven to 400 degrees. Stuff butter under the skin.
Roast uncovered in a sided cookie sheet for 10 minutes, skin side up.
Flip to skin side down for 3 minutes. Flip again for 5 minutes or until just done.
Coat pasta with pan juices.
