appetizer

new mexican style chimichanga (not fried): shredded beef blended with sautéed tomatoes, onions, garlic, cilantro and green chile. wrapped in a warm soft tortilla and served with a cool avocado/buttermilk dressing

soup

green chile stew: lean pork, green chile, tomatoes, onions, black beans, tomatillos, garlic and cilantro

entree

carne adovada: pork sirloin marinated in red chile and onions. it's then slow roasted until the meat almost falls apart. lightly sprinkled with shredded jack cheese and served with a whole wheat tortilla

callabacitas: yellow squash sautéed with onions, green chile, corn, garlic and cilantro

posole: hominy seasoned with onions, cilantro, garlic and red chile and slow cooked until plump

dessert

biscochitos: shortbread cookie flavored with anise

arroz dulce: rice pudding
