seared hudson valley foie gras on a stew of radishes, radish greens and old sherry vinegar

sixth course

oregon truffle dusted local lamb loin on roasted wild mushrooms, local wild Italian mint and black eyed peas

seventh course

buttermilk sorbet with mr. farrier's honeycomb and barely sweetened oatmeal baklava
