Sybaris is returning to the Beard House in NYC to prepare a menu based on some of the local food that members of the Confederated Tribes of the Grand Ronde have traditionally eaten. This is your chance to sample the menu without flying east!

sturgeon- cedar paper grilled sturgeon, wild greens

quail- quail, acorn-grape leaf "tamale", oregon grape reduction

venison- venison sirloin, wapato mash, wild mint choron

huckleberry- toasted honey-douglas fir ice cream, huckleberry sorbet mound
